Muesli Pancakes

I think I’ve made it quite clear that I completely and utterly heart breakfast. But you know, I’m not the type of girl who can eat eggs and hollandaise sauce every morning, especially when we’re officially in bikini season.

Yeah..I’m one of those girls that eats a modest bowl of muesli most days – what a bore.

Eggs Hemingway

Something quite exciting happened on Friday. I sat the final exam for my degree, the climax of three years of hard work, and in my case a lot of frustration.

I am ecstatic. I feel like Roger Daltrey.

Fede’s Crostata

For a fair amount of time my Italian teacher Fede had been asking me to make her a crostata, using the same shortcrust pastry that I use for my mince pies. Then a couple of weeks ago she handed me a gorgeous jar of blueberry jam for the filling, prompting me to get to work in the kitchen (a sign of patience wearing thin perhaps after months of promises and no delivery!).

I’d never made a crostata before, although the concept was simple – pastry filled with jam, caged in with pastry in a lattice design on top. I could totally do that. Continue reading

Conchigliette di Farro with Super Greens

One of my favourite things to do on the weekend is head to the local farmers market. I often take a stroll down there to gather some inspiration and hand pick ingredients for lunch. The farmers market near where I live is admittedly a little small, but they really do have some wonderful produce on offer as well as beautifully prepared hot food, which draws a number of people to the market to have lunch on the go and a nose around.

One particular stall that I really love sells a variety of farro and spelt, as well as a modest selection of farro pasta. I absolutely love farro, but before Saturday I had never tried it in pasta form – so I grabbed a bag of conchigliette intent on throwing together something pasta based and healthy.  Continue reading

Cyprus: 5 days in pictures

Every year during March or April I come back to Cyprus to visit family and friends. Although the weather isn’t ideal for the beach, this is still one of my favourite times of year to visit. What is usually considered to be desert land is surprisingly vibrant – flowers are in bloom, orange and lemon trees bear their fruit and the ever so green grass provides a brilliant contrast to endless blue skies.
